But the college has actually had an edible garden for many years, according to Camosun Culinary Arts chair Gilbert Noussitou, who says there have been problems with students vandalizing the garden.<\/p>\n<p>\u201cWe\u2019ve always had a difficulty in getting it maintained and finding the right people to do the work,\u201d says Noussitou, adding that \u201cstudents picking at it and literally destroying the plants\u201d was an ongoing problem.<\/p>\n<p>Noussitou decided to create a program within Culinary Arts that educated students on how to use the garden in a healthy and informed way.<\/p>\n<p>\u201cThe plan was to make something nice that people would likely respect a little more than just herbs planted on the ground,\u201d he says.<\/p>\n<p>The herbs will be used by Camosun Culinary Arts students for cooking; Noussitou says the garden is used on a daily basis by students in the program.<\/p>\n<figure id=\"attachment_12357\" aria-describedby=\"caption-attachment-12357\" style=\"width: 300px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2016\/08\/IMG_6299.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-12357 size-medium\" src=\"https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2016\/08\/IMG_6299-300x225.jpg\" alt=\"The edible garden at Camosun's Interurban campus (photo by Greg Pratt\/Nexus).\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2016\/08\/IMG_6299-300x225.jpg 300w, https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2016\/08\/IMG_6299.jpg 700w, https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2016\/08\/IMG_6299-180x135.jpg 180w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-12357\" class=\"wp-caption-text\">The edible garden at Camosun&#8217;s Interurban campus (photo by Greg Pratt\/<em>Nexus<\/em>).<\/figcaption><\/figure>\n<p>\u201cWe have all kinds of menus and programs and so on,\u201d he says. \u201cStudents will go there on a daily basis and pick the herbs that they need. So far the garden is a little slim because it\u2019s fairly new.\u201d<\/p>\n<p>Noussitou says the garden will need another season to cultivate fully, and he is looking forward to the new fresh flavours that will be in some food around Camosun.<\/p>\n<p>\u201cIt\u2019s part of what we all do,\u201d he says, \u201cminimizing the footprint and maybe having a little better understanding of what food is about and where it\u2019s coming from, apart from the main supplier.\u201d<\/p>\n<p>Noussitou says that the way people obtain food is starting to change, and many people are a lot more aware of where their food is grown.<\/p>\n<p>\u201cIt\u2019s part of the attitude that is changing pretty well everywhere,\u201d he says, adding, \u201cgrowing herbs is really quite easy to do.\u201d<\/p>\n<p>Noussitou says that growing food locally can create a respect for that process. But he is definitely hoping that Camosun students will show some decency around the garden and not treat it like a dumping ground.<\/p>\n<p>\u201cWe\u2019re going to put some signs up next to each herb describing them and saying a few words about what they are and how to use them,\u201d says Noussitou, \u201cand just hope that people are not going to start throwing cigarette butts and spitting and all kinds of things that we find in the flower bed typically.\u201d<\/p>\n<p>Noussitou says that the main thing that will help the garden to produce more plants\u2014as he is hoping it will\u2014is respect.<\/p>\n<p>\u201cThat\u2019s one of the reasons why we tried to make a liveable garden,\u201d he says, saying that he&#8217;s pushing for &#8220;that respect that we\u2019re asking everyone to have.\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Camosun College recently announced that an edible garden is now open at its Interurban campus.
