Complaining about my situation to my mother on the phone the other day, she countered with one of her perspicuous comments that seem to surface in times of need. She told me that one of her clearest memories of university is of being unemployed and having time to soak everything in. It was around the middle of November, and her neighbours had given her a few pumpkins post-Halloween. Despite being a poor student, she made pies out of all of the pumpkins and gave them to friends and neighbours.<\/p>\n<p><a href=\"https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2011\/11\/DSC014091.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-1656\" title=\"DSC01409\" src=\"https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2011\/11\/DSC014091-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2011\/11\/DSC014091-300x225.jpg 300w, https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2011\/11\/DSC014091-180x135.jpg 180w, https:\/\/www.nexusnewspaper.com\/newsite\/wp-content\/uploads\/2011\/11\/DSC014091.jpg 700w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>While these pancakes were not extended to my neighbours, they were made out of a free pumpkin I was given at the grocery store. Apparently it was too ugly for anyone to buy, but it still made some bang-up pancakes.<\/p>\n<p><em>Serves four generously<\/em><\/p>\n<p>Prep time five minutes, cook time 20 minutes<\/p>\n<p><em>Note: These pancakes are pretty forgiving as far as flour goes. Use your favourite mix of flours. The gluten-free flours I like best for this kind of thing are white\/brown rice, millet, oat, sorghum, amaranth, and tapioca starch. Be careful not to use too much of stronger-flavoured flours like amaranth, buckwheat, chickpea, or other bean flours. \u00a0<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 cups gluten-free flour mix (I used \u00bd cup tapioca starch, \u00be cups brown rice flour, and \u00be cups oat flour)<\/p>\n<p>4 tbsp sugar<\/p>\n<p>2 tsp baking powder<\/p>\n<p>1 tsp baking soda<\/p>\n<p>1 tbsp pumpkin pie spice blend (recipe below)<\/p>\n<p>\u00bd tsp salt<\/p>\n<p>1 cup pumpkin (canned, or roasted and pur\u017ded from fresh)<\/p>\n<p>1 \u00bd cups milk<\/p>\n<p>2 eggs<\/p>\n<p>2 tbsp cooking oil<\/p>\n<p>1 tsp vanilla extract<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Pumpkin Pie Spice Blend<\/strong><\/p>\n<p>1 tbsp cinnamon<\/p>\n<p>\u00be tsp ground allspice<\/p>\n<p>Scant \u00bd tsp ground cloves<\/p>\n<p>1 \u00bd tsp ground ginger<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>In a large bowl, sift together the flour, baking powder, baking soda, spices, and salt. Add the sugar and mix thoroughly with a whisk.<\/p>\n<p>In a separate bowl, whisk the eggs, and mix in the rest of the wet ingredients. Next, make a well in the center of the flour mix, pour in the wet ingredients, and mix thoroughly.<\/p>\n<p>Heat a lightly oiled frying pan over medium heat. Pour approximately \u00bc cup of batter into the pan per pancake, or whatever amount you like.
