So, yes, his first real beer experiences were smuggling beer across the border.<\/p>\n<p>\u201cI took microbiology and did most of my projects on beer,\u201d says Phillips. \u201cAfter university I didn\u2019t know what I wanted to get into, but beer was something I kept swaying towards, so I came out west and got apprenticeships with breweries, learning the trade the old-fashioned way.\u201d<\/p>\n<p>Phillips worked for Whistler Brewing Company, Grizzly Paw, Wild Horse, and Spinnakers before creating his own company, Phillips Brewery.<\/p>\n<p>\u201cVictoria has a very engaged beer culture, who are really excited about beer,\u201d says Phillips. \u201cThis allows brewers to make all kinds of beer. The more kinds of beer we make, the more interesting it becomes; this makes Victorians even bigger beer enthusiasts.\u201d<\/p>\n<p>Phillips finds beer festivals like the Strathcona Hotel\u2019s third annual Island Beer Festival exciting because he usually works with ingredients and pumps all day in his brewery. He loves that he can experience the joy that patrons get out of tasting the final product while letting them learn about the beer process and flavors.<\/p>\n<p>According to Strathcona events manager Danielle Sykes, the festival will include 35 different kinds of beer from the 11 breweries, as well as food and live music from local singer\/songwriters Mike Hamm and Tyler Harvey. \u201cWe wanted to offer something fun and different in the winter for locals to get out and enjoy the arts of drink, food, and music,\u201d she says.<\/p>\n<p>The Island Beer Festival isn\u2019t the only thing that\u2019s going to offer locals something fun and different this year.
